2009 Holiday Food Part 3 - X'mas Cookies

Every year I have two big Christmas projects: sending out a creative seasonal card, and making a batch of Christmas cookies for gifts (and snacking). This is the best way to show our gratitude to our co-workers, friends, family and someone who helps you a lot. Unlike gifts you purchase, you put your time and effort into baking so it is always very special.

One cookie that I make each year is pecan bars which is my husband's ultimate favorite so I never skip that. For the rest, I try to make different cookies each year.

This year, I made double chocolate cookie sandwich which is a small chocolate cookie sandwich with white chocolate ganache inside. This one was my favorite this season. Then, a "trio" which is three small butter cookies are attached to each other and each cookie has a different fruit preserve inside. The fourth cookie is called a butterscotch-glazed coffee shortbread bar. The butterscotch is not overwhelmingly sweet but this cookie has a fantastic aroma with a splash of brewed espresso. I loved it. And lastly, traditional holiday decorated cutout cookies, of course.
