Red Rice Pilaf
recipe from "Art of Simple Food" by Alice Waters
Yield: 3-4 servings
Ingredients
- 1-1/2 tablespoons olive oil
- 1 small onion ..... diced fine
- 1 cup long-grain rice ..... rinsed and drained
- 2 garlic cloves ..... chopped fine
- 1/2 teaspoon salt (less, if using seasoned broth)
- 2 tablespoons coarsely chopped cilantro
- 1-1/2 cups chicken broth or water
Cooking Directions

In a pot heat olive oil and add small onion and cook for 5 minutes.
Stir in rice and cook for another 5 minutes.

Add garlic, tomatoes, salt and cilantro and stir and cook for 1 - 2 minutes.
Pour in broth or water and bring to a boil, turn the heat down to low, and cover tightly. Cook until all the liquid is absorbed and the rice is tender about 15 minutes. Turn off the heat and let rest, covered, for 10 minutes before serving.
