17 Bean & Barley SaladFresh Corn and Avocado Salad

Yield 4 servings

Ingredients

Corn kernels from two ears of corn(you can get a tip for cutting corn kernels from the cob from bon appétit.com)
1 tomato ..... diced
1 avocado ..... diced
1/4 small red onion ..... thinly sliced
4 basil leaves ..... thinly sliced
Lime juice from 1-1/2 limes
Lime zest from 1-1/2 limes ..... grated
2 tbsp extra virgin olive oil
1/4 tsp salt (or more)
pepper


Method

1. Put everything in a medium sized bowl and mix gently. Chill until serve.
