  • corn kernels from two ears of corn *
  • 1 tomato ..... diced
  • 1 avocado ..... diced
  • 1/4 small red onion ..... thinly sliced
  • 4 basil leaves ..... thinly sliced
  • Lime juice from 1-1/2 limes
  • Lime zest from 1-1/2 limes ..... grated
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon (or more) salt
  • pepper

Cooking Directions

  1. Put everything in a medium sized bowl and mix gently. Chill until serve.
