Pickled Red Onions

I love red onions. I put it in a lots of my recipes. So when I decided to do the pickling project, first thing I wanted to pickle was red onion.

I googled picked red onion recipes and found 5-6 recipes that I liked and picked the best combination of the spices as I like. The result was really great. I liked to put them in my sandwitch.

Pickled Red Onions

Yield 1 12oz. jar

Ingredients

1/2 cup fresh lime juice
1/4 cup white vinegar
1/2 tbsp sugar
1 tsp kosher salt
1 medium red onions ..... slice
2 tsp chopped fresh oregano
1whole serrano chile

Method

1. Whisk together the lime juice, vinegar, sugar, and salt in a non reactive bowl until salt and sugar are dissovled.

2. Add onion, oregano and chiles to the lime juice mixture and stir well.

3. Cover and refrigerate for at least 24 hours up to 2 days and stirring the mixture once.
