Best Carbonara Ever I Tested

Once a while, I am urged to eat really creamy and fatty food and when it happens, I fix a spagetti carbonara.

A couple years ago, I was watching the Giada De Laurentiis's show "Everyday Italian" and she was making this dish. At first, I was not so currious but she mentioned about "cinammon" and I got really excited. Ms. Giada puts a pinch of cinammon when she sautés the pancetta and bacon (everything else is the same as the usual carbonara sauce). I have never thought about putting cinammon into the carbonara but why not! It should work. I use cinammon often for my cooking (for lentil soup, Chinese dish and of course Indian dish) and I konw cinammon brings up the savory flavor, too.

I made the spagetti carbonara that night I saw her show and I remember my husband was wowing. It really works. So creamy, salty, cheesy with the hint of the cinammon.

Since that night, I never look for another recipe for a spagetti carbonara. This is it.
